Pei Mei Salad

We love to plant cabbage in our garden. Cabbage means lots of Pei Mei salad for those hot summer days. My whole family digs in and loves the refreshing salad that seems to hit the spot. Not only is it served for dinner, but I often find someone dipping into it about 10:00 at night, just can't stay away.
Recipe follows:
3 to 4 large chicken breast grilled and then cut into bite sized pieces
1 large cabbage shredded or cut into bite sized pieces
1 bunch onions sliced
Toast the following separately on a cookie sheet. Either place in oven at 350 or broil. Watch Very Closely, do not leave unattended.
3 pkgs. beef Ramen noodles(broken up)
1/4 cup sesame seeds
1/3 cup slivered almonds
Dressing:
1 1/4 cup oil
1/3 cup sugar
4 1/2 TBS. soy sauce
3 TBS. white vinegar
1 tsp. pepper
3 pkg. beef seasoning from Ramen noodles
Pour over all the ingredients and toss.
Eat and enjoy!!!
